Sweet Pea Dip With Mint And Basil

Servings - 4

Ingredients:

  • ½ cup onion, chopped

  • 2 cups green peas

  • 1 to 2 tablespoons of extra virgin olive oil

  • ½ cup fresh basil leaves

  • ½ cup mint leaves

  • 1 teaspoon sea salt

Instructions:

Place a pan over medium-high heat. Add 1 tbsp olive oil and sauté onion until fragrant for about 3 minutes. Next add peas to the pan and ¼ cup water to cover the peas. Cook until peas are bright green for approximately 2 minutes (be sure not to overcook or they will lose the bright color).

Remove from heat and strain if there is excess water. Place onion and peas in blender with basil, mint and sea salt. Blend until smooth. Give it a quick taste and adjust seasonings accordingly. Cover and place in fridge to cool and serve.

Great with vegetables or used as a speed on a sandwich. You can even add a scoop to a salad for a boost of protein.
