Arugula, Pear and Goat Cheese Salad

This salad is perfect for fall, it can easily be made for a light lunch, dinner paired with a protein or presented beautifully for the perfect salad starter at any dinner party.

The bitter arugula leaves are balanced by the sweetness from the pear and the creaminess from the goat cheese to make it the most perfect bite! I like to show how decadent and delicious something as simple as a 4 ingredient salad can be.

ARUGULA, PEAR, AND GOAT CHEESE SALAD

Servings - 4

Ingredients:

  • 3 cups arugula

  • 1 pear, chopped for your everyday salad, cored and thinly sliced in rounds for a fancy version

  • 1/4 cup goat cheese crumbles

  • 1/8 cup walnuts, chopped

  • 3 T balsamic vinegar

  • 3 T EVOO

  • 1 t honey

  • 1 t shallot, minced

  • 1 T water

Instructions:

In a large bowl toss together arugula, pear, goat cheese and walnuts.

In a separate bowl, whisk together vinegar, EVOO, honey, shallot and water.

Pour dressing over salad and mix well until evenly coated.

Distribute salad evenly among plates and serve.

Want to serve it a little fancier? Slice the pears in rounds and layer the arugula, cheese and nuts evenly between pear slices. Drizzle dressing on top and serve.
